Broc Cellars - 2021 Trousseau Noir

I feel like when there is something that you keep special to you, there are two ways of showing it love. Either you connect to it every day, in some way, or you connect with it very infrequently and just let its impact resonate with you for a long time. My comfort show is Bob’s Burgers. I think I’ve seen every episode about 10 times at this point. On the other hand, My favorite movie I have only watched three times. I’ve only been to my favorite restaurant twice. And finally, Broc Cellars, Trousseau Noir has only graced my palette once.

Wirth Ranch

Green Valley,

Solano County,

California

Varietals Grown:

Trousseau, Valdiguie, Zinfandel, Syrah, Cabernet Sauvignon

I tried this wine for the first and only time at Forage in Cambridge, MA. There, I had a tasting menu oriented around California wines. My girlfriend and I were served a tall glass of this incredible natural wine with a buckwheat waffle, fresh arugula, and Narragansett Creamery Burrata. Credit where it is due, We had a wonderful experience at Forage, in general. The staff was lovely, food was awesome.

However, this wine stole the show. We salvaged every drop. Our server described it as a cousin to the Pinot Noir, but without the heavy syrup that other rich, red wines tend to have. It was all of the flavor of a red, without the weight that comes with it. Each sip was delicate, yet flavorful, it was smooth but did not lack richness.

The flavor profile of Trousseau Noir is known to include: cherry, strawberry, orange, lemon, nutmeg, black pepper, ripe cheese, seafoam, and cured meats.

Trousseau Noir Pairs well with: Comté, creamy cheeses, cured meats, wild game, mushrooms, chicken, pork, steak, tuna, saffron, paprika,

WINEMAKER’S NOTES:

“This is our fifth vintage making Trousseau after we had old Syrah vines at Wirth Ranch grafted over in 2016. The cuttings come from Matthew Rorick Heritage Vineyard where they were propagated from the library in Jackson Vineyard, and planted in 1888. The Trousseau and Zinfandel grapes for the 2021 vintage were 100% destemmed and fermented together in open-top stainless fermenters. After pressing, we moved the wine into a concrete tank for 6 months. Unfiltered.”
